SOMETHING SWEET

 
1.Gajar ka Halwa:-
            As the winter starts we start waiting for Gajar ka halwa, made by my mom. It is mouth watering dish liked by all Indians.It is simple to prepare and contains only sugar,milk and carrot. As it is time consuming recipe
,it becomes very hard for me to wait to be served.
            It contains high amount of sugar and dry fruits( high calories), so sugar patients be careful.It can be served as dessert.

Ingredients

  • 1 kg carrot

  • 4 tbsp ghee

     

  • 1 ltr full fat milk

     

  • 250 gms sugar

  • 1/2 tsp cardamom (elaichi) powder

  • Dry fruits-chopped almonds,dates,cashew nuts and raisins ,or as per your taste.

     

     

Method


  1. Wash, peal and grate the carrots.
  2. In a thick bottomed vessel add 2 tbsp of ghee and grated carrots and stir for 4 to 5 minutes.
  3. Then add the milk and cook on high flame till the milk is absorbed totally.
  4. Add the sugar and stir till the ghee leaves the bottom of the vessel.
  5. Add the cardomom powder and 2 tbsp of ghee mix well cook for few minutes and remove from the flame.
  6. For garnishing sprinkle dry fruits and mix well.
  7. Serve hot or cold.




2.Kheer:- 




 
Ingredients:-
  • Basmati rice-1 cup
  • Milk-1/2 litre
  • Sugar-10-12 tbsp
  • A few strands of saffron
  • Ghee -1 tbsp
  • Water -1 cup
  • Cardamom Powder-1 tbsp
  • Dry fruits
Method:-
  • Soak rice in water for thirty minutes.
  • Wash them thoroughly.
  • Take the milk in pan and boil it.
  • Meanwhile melt ghee in pan, add rice and fry until it is clear.
  • Add this rice to boiling milk.
  • Simmer until rice is cooked ,add water if required.
  • Mix sugar and add dry fruits.
  • Stir continuously until it boils.
  • In a different bowl mix saffron with little amount of milk.  
  • Add it to the pan with cardamom powder.
  • Kheer is ready ,serve it hot or cold.
